Richard Lawson of Figtree Food Company has been a cook and chef for over 25 years and has cooked at many restaurants, cafes and festivals both in Sydney and beyond, including stints with Tony Bilson, Armando Peruoco and Mudgee’s only hatted restaurant ‘The Zinhouse.’
Richard is no stranger to the food and olive culture of NSW. He travels widely with his very popular brand of Tapenade, Granola, Jam and Dukkah, regularly moving between the superb olive growing region of Mudgee in the Central West of New South Wales and Mystery Bay on the far south coast.
After a global musical career with internationally acclaimed Australian alternative rock group the Lime Spiders, Richard decamped from the hubbub of inner city Sydney, trying his hand at agricultural artistry in the growing fields of the Central West. In 1996, Richard established Figtree Retreat Olives, where he planted over 300 certified organic olive trees by hand – back breaking work which included hand watering his farm at the height of a long, hot drought. He also established a substantial orchard and kitchen garden.
The call of the kitchen and garden is never far from Richard. His commitment, passion and experience in all elements of food from the paddock to the plate is reflected in his range of products which shift with the seasons. Blending the kitchen garden into cooking, eating direct from the land, working with seasonal produce, and working wonders with abundance when the fruit is ‘on’ is his true flair and raison d’être.
Richard now works with his love, Elizabeth Walton, an artist, writer and musician who works together with Richard in every element of Figtree Food Company. Together, Rich and Liz spend their time growing, blending, and bringing specialty food products to the people of New South Wales. They can often be found on a remote hillside picking wild apples or catching the ripening fennel as its blooms husk and harden on the outskirts of abandoned towns. They also play together in an indie folk-contemporary duet called Honey, playing at regional music festivals around Australia.
